A Thai Dinner – Beef Panang

PanangPanang is a type of Thai curry and here in Thailand you can easily find all kinds of curry pastes at grocery stores. I made this for dinner using a lighter version of coconut milk, with less saturated fat. It still has coconut milk in it but in a smaller percentage, the rest is milk from rice, sunflower oil and soy.ย  Coconut milk is usually very rich and highly fattening but this is a healthier version and I’m glad they came up with this. Better for your health without lacking in flavors.

What’s usually in Panang

{Panang Paste sometimes called Red Curry Paste}

{fish sauce}

{sugar – just to balance the flavors.. some people like the curry on the sweet side}

{coconut milk}

{kaffer lime leaves-for aroma and garnish}

{basil-for aroma}

{choice of meat – beef, chicken or pork is best}

{fish sauce and palm sugar for flavors}

Usually Thai restaurants overseas adjust their dishes according to the way the locals like it, so curries might be slightly lighter in color and taste milder.. people cook them differently.. In Thailand we make it strong in colors and flavors. And fish sauce is always the essential.

I had my dinner with rice and what you can see in the background is fried eggs. A very simple thing to cook but an all time favorite for almost everybody in Thailand. It’s a go-to, when you don’t know what to eat.. or you don’t have time to cook something fancy ๐Ÿ™‚

Fried Eggs

{1-2 eggs}

{1-2 teaspoon soy sauce}

stir eggs and soy sauce together you can use a whisk to make the batter more airy, and fry in a sauce pan, don’t forget to add some oil or cooking spray first ๐Ÿ™‚ eat with rice
